Made keto empanadas with zero carb mission soft tortillas!

Ingredients:

  1. Ground beef,
  2. rotel,
  3. green chilies,
  4. red onion,
  5. salt,
  6. pepper,
  7. minced garlic,
  8. onion powder,
  9. chili powder,
  10. cumin cooked together.

Instructions:

  1. Put meat mixture into tortilla and sprinkle with cheese of your choice (I used Colby jack).
  2. Brush a scrambled egg around the mix and fold in half.
  3. Press edges with a fork to seal.
  4. Brush both sides with oil (I used vegetable).
  5. Sprinkle a little garlic powder, grated Parmesan, and Italian seasoning.
  6. Bake at 375 for about 20 minutes.
  7. These were awesome!
