Keto Sloppy Joe Zucchini Boats

Ingredients:

  • 4 large zucchinis, halved lengthwise
  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 onion, finely chopped
  • 1 jalapeño, finely chopped (remove seeds for less heat if desired)
  • 1 cup sugar-free or low-carb tomato sauce
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1-2 tomatoes, thinly sliced
  • Grated Parmesan cheese, for topping
  • Hot sauce, to taste
  • Fresh parsley or cilantro, chopped (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Zucchini Boats:
    • Using a spoon, scoop out the seeds and some flesh from each zucchini half, creating a well for the filling. Place the zucchini boats in a baking dish.
  3. Cook the Filling:
    • In a large skillet over medium heat, brown the ground beef. Add chopped onions and jalapeños, and cook until the vegetables are softened.
  4. Add Sauce and Seasonings:
    • Stir in minced garlic, chili powder, smoked paprika, salt, and pepper. Add the sugar-free or low-carb tomato sauce, mixing well. Allow the mixture to simmer for 5-7 minutes until flavors meld.
  5. Fill the Zucchini Boats:
