keto snickers brownies

Ingredients:

For the Brownie Base:

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup powdered erythritol or sweetener of your choice
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract

For the Snickers Layer:

  • 1 cup sugar-free creamy peanut butter
  • 1/4 cup powdered erythritol or sweetener of your choice
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped roasted peanuts

For the Chocolate Ganache:

  • 1/2 cup sugar-free dark chocolate chips
  • 2 tablespoons heavy cream

Instructions:

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the almond flour, cocoa powder, powdered erythritol, and salt for the brownie base.
  3. Add the melted butter, eggs, and vanilla extract to the dry ingredients and mix until well combined.
  4. Pour the brownie batter into the prepared baking dish and spread it out evenly.
  5. Bake the brownie base in the preheated oven for 15-20 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs.
  6. While the brownie base is baking, prepare the Snickers layer. In a medium-sized bowl, mix together the peanut butter, powdered erythritol, heavy cream, and vanilla extract until smooth and creamy. Stir in the chopped roasted peanuts.
  7. Once the brownie base is done baking, remove it from the oven and let it cool for a few minutes.
  8. Spread the peanut butter Snickers layer evenly over the brownie base.
  9. In a small microwave-safe bowl, melt the sugar-free dark chocolate chips with the heavy cream in 30-second intervals, stirring in between, until you have a smooth and glossy ganache.
  10. Pour the chocolate ganache over the Snickers layer and spread it out evenly.
  11. Place the baking dish in the refrigerator for at least 2 hours or until the ganache has set.
  12. Once the keto Snickers brownies have set, remove them from the baking dish using the parchment paper and cut them into squares.
