Ingredients:

  • 9-12 large mushrooms
  • 1/2 cup ricotta cheese
  • 3-5 garlic cloves, minced
  • 1/4 cup baby spinach, chopped finely
  • 3-5 fresh basil leaves, sliced
  • 1/2 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • 1 cup marinara sauce

Instructions:

  1. Begin by cleaning the mushrooms thoroughly with a damp paper towel, ensuring all dirt and debris are removed.
  2. Remove the stems from the mushrooms and set them aside for another recipe. Keep the mushroom caps intact and set them aside.
  3. Mince the garlic cloves and set them aside.
  4. Slice the basil leaves and set them aside.
  5. Chop the baby spinach into fine, small pieces and set them aside.
  6. In a mixing bowl, combine the ricotta cheese, minced garlic cloves, chopped baby spinach, sliced basil (reserving some for garnish), shredded mozzarella cheese, salt, and black pepper. Mix well to create the stuffing mixture.
  7. Take one mushroom cap at a time and fill it with a heaping spoonful of the cheese mixture, ensuring each mushroom is generously stuffed. Repeat this process until all mushrooms are filled.
  8. Spoon a teaspoon of marinara sauce onto each stuffed mushroom, then top them with additional shredded mozzarella cheese.
  9. Preheat your air fryer to 400°F (200°C). Place the stuffed mushrooms in the air fryer basket in a single layer, ensuring they are not overcrowded.
  10. Air fry the mushrooms for about 5-7 minutes, or until the cheese is melted and bubbly.
