Keto Walnut Flaxseed Bread

Keto Walnut Flaxseed Bread

This is a wonderful Keto Walnut Flaxseed Bread with a little bit of crunch from the walnuts and a nice aroma from the rum extract. If you don’t have the rum extract with you, you can always omit it or replace it with vanilla extract. But do include them if that’s possible for you as its subtle boost in flavor really does make a lot of difference in the bread. Our neighborhood bakeries always have this in their daily bread selection except for one thing – they are not keto-friendly. We feel so much pleasure to be able to recreate this in a super low carb and keto-friendly way. This is indeed super exciting! We hope you will love our sharing too as much as we like it. Enjoy!

WHAT IS FLAXSEED BREAD?

This Keto Walnut Flaxseed Bread is a healthy bread made with nutritious almond flour and a flax seed meal. It’s keto, low carb, and naturally gluten-free!

The flax imparts a slightly nutty flavor to the bread, it’s delicious.

A GRAIN-FREE LOW CARB KETO BREAD:

With wheat and other grains off the table, there still are many ways of enjoying bread when you’re on a low-carb diet.

Low-carb bread is generally made with either coconut flour or almond flour as a base. I have quite a few recipes on my website using either or both in combination. Try my easy low-carb rolls, these low-carb English muffins, or this really rustic Paleo bread, which is packed with seeds.

Notes

The key success here to carefully control the water. Excessive water will cause the bread to deflate. The bread dough should be solid and sticky before go into the oven.
Egg whites must be at room temperature.
The water must be boiling.
Weight everything using weighing device. I use a device which gives me up to 0.01g accuracy.
Flaxseed flour must be grounded to fine powder form so that it can absorb water efficiently.
Psyllium husk MUST NOT be too fine as it will block its ability to absorb water.
Do not use a cake tin which is too small for it to capture heat and rise evenly.
Do not cut the bread while it is still hot as the bread will shrunk and collapse which end up a dense bottom.
Let it cool in the oven with the oven door opened will prevent the bread shrunk due to temperature shock.
If you need to cover the top with aluminium foil to avoid burning, ensure you only open the oven door after the bread has already risen tall and solid. Usually after half hour of baking.
