Keto Pizza Pancakes

Ingredients

-1c pork rind crumbs

-2tbsp dry parmesan

-1tbsp beef gelatin

-1/4tsp baking powder (plus a pinch extra)

-To taste: garlic & onion powder, Italian herb blend, salt & pepper

-1/4c heavy cream

-4 eggs, room temp

-1-2tbsp chicken stock/broth

Whisk together very well the dry ingredients (up through seasonings) in a large bowl. In a smaller bowl, lightly whisk together wet ingredients.

Add wet into dry and whisk until well combined and no clumps exist. Let sit for about 5 minutes for the gelatin to bloom.

Meanwhile, preheat a griddle over medium and grease with tallow (I prefer it for pan frying- you can use butter).

Scoop about 1/4ish cup of mixture onto your preheated griddle for each pancake. Let cook about 3-5 minutes per side (depending on how big you’re going).

Let cool COMPLETELY, preferably overnight in the fridge. (I made my pancakes on Saturday and we ate them for dinner Monday.)

To make into a pizza, preheat your oven to 450F. Lay your pancakes onto a lined, rimmed baking sheet. Heat for 4 minutes, flip, heat for another 4 minutes.

Top as desired (mine are Rao’s, goat’s milk mozzarella, olive slices, thick cut bacon and more mozzarella), then return to oven for a few minutes until cheese is melty and edges are crispy.

Let cool a few minutes on the pan then enjoy!
