Ingredients:

For the Zucchini Pockets:

  • 2 medium-sized zucchinis
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup chopped spinach
  • 1/4 cup fresh basil, finely chopped
  • Salt and pepper to taste
  • 1 cup almond flour
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • Olive oil for frying

For the Marinara Sauce:

  • 2 cups sugar-free marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions:

For the Zucchini Pockets:

  1. Prepare the Zucchini:
    • Use a mandolin or a sharp knife to slice the zucchinis lengthwise into thin strips, about 1/8 inch thick.
  2. Prepare the Filling:
    • In a mixing bowl, combine the ricotta cheese, mozzarella cheese, chopped spinach, and finely chopped basil.
    • Season the mixture with salt and pepper to taste.
  3. Assemble the Zucchini Pockets:
    • Lay out one slice of zucchini and spoon a small amount of the cheese and spinach mixture at one end.
    • Carefully roll the zucchini slice around the filling, creating a pocket. Repeat with the remaining zucchini slices and filling.
  4. Coating the Pockets:
    • In separate shallow dishes, place the almond flour, beaten eggs, and grated Parmesan cheese.
    • Take each zucchini pocket and roll it first in almond flour, then dip it in the beaten eggs, and finally coat it in Parmesan cheese.
  5. Fry the Zucchini Pockets:
    • Heat olive oil in a large skillet over medium-high heat.
    • Fry the zucchini pockets in batches, turning them occasionally until they are golden brown and crispy on all sides. This should take about 2-3 minutes per side.

For the Marinara Sauce:

  1. Prepare the Marinara Sauce:
    • In a separate saucepan, heat the sugar-free marinara sauce over low heat.
    • Add Italian seasoning, salt, and pepper to taste. Stir well.
