  • 8 large eggs
  • 8 oz (226 g) cream cheese, softened
  • 4 tbsp butter, melted
  • 6 tbsp coconut flour

1. Preheat the oven
Preheat your oven to 350Β°F (175Β°C). Grease a loaf pan well or line it with parchment paper.

3. Beat the eggs
Add the eggs to a large mixing bowl and whisk until they are well combined and slightly frothy.

7. Bake
Place in the preheated 350Β°F oven and bake for approximately 45 minutes, or until the center is set and a toothpick inserted into the middle comes out mostly clean.

If the top begins browning too quickly, loosely cover it with foil during the final part of baking.

8. Cool completely
Remove the bread from the oven and let it cool in the pan for about 10–15 minutes. Carefully remove it from the pan and place it on a wire rack.

Allow it to cool completely before slicing. This helps the bread firm up and makes cleaner slices.

BLT:
Toast two slices and fill with crispy bacon, lettuce, and tomato.

Toast a slice, spread with butter, and add a small amount of sugar-free raspberry or strawberry jam.

Simple breakfast:

Because this bread contains coconut flour, don’t substitute it 1:1 with almond flour. Coconut flour absorbs considerably more liquid, so changing the flour can significantly alter the texture.
