Cottage Cheese Chocolate Brownie Bites
Soft, chocolatey, nutty, and naturally sweetened with monk fruit. Cottage cheese adds a nice protein boost while almond flour keeps them flourless and gluten-free.

- 1 cup cottage cheese
- 1 cup almond flour
- 1 large egg
- 2 tbsp unsweetened cocoa powder
- 1 tsp baking powder
- Monk fruit sweetener, to taste (start with the equivalent of 2β3 tbsp sugar)
- ΒΌ cup chopped pecans
- 1 tsp vanilla extract β optional
- Pinch of salt β optional

- Preheat the oven to 350Β°F (175Β°C). Line a small 8Γ8-inch baking pan with parchment paper or lightly grease it.
- Blend the wet ingredients:
Add the cottage cheese and egg to a blender or food processor. Blend until smooth and creamy. Add vanilla if using. - Combine the dry ingredients:
In a bowl, whisk together the almond flour, cocoa powder, baking powder, monk fruit sweetener, and salt. - Make the batter:
Pour the blended cottage cheese mixture into the dry ingredients. Stir until just combined. Fold in the chopped pecans. - Bake:
Spread the batter evenly into the prepared pan. Bake for 20β25 minutes, or until the center is set and a toothpick comes out with a few moist crumbs. - Cool:
Let it cool in the pan for 10β15 minutes before slicing. For firmer brownie bites, refrigerate for about 30 minutes.
