A cozy, protein-rich breakfast with creamy cottage cheese, warm cinnamon, and tender baked apples. Perfect for a make-ahead breakfast or a comforting weekend treat!

For the cottage cheese base:

  • 1 cup cottage cheese
  • 2 large eggs
  • Β½ cup almond flour or rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2–3 tbsp honey or maple syrup, optional
  • Β½ tsp baking powder

For the apples:

  • 1 medium apple, peeled and diced
  • Β½ tsp cinnamon
  • 1 tsp honey or maple syrup, optional
  • 1 tbsp water

Optional toppings:

  • Chopped walnuts or pecans
  • A spoonful of Greek yogurt
  • Extra cinnamon
  • A few apple slices
  • Nut butter

  1. Preheat the oven to 350Β°F (175Β°C). Lightly grease 2 small oven-safe ramekins or bowls.
  2. Prepare the apple mixture:
    Add the diced apple, Β½ tsp cinnamon, honey/maple syrup if using, and water to a small bowl. Toss well.
  3. Make the cottage cheese mixture:
    Add cottage cheese, eggs, almond flour (or oats), cinnamon, vanilla, sweetener, and baking powder to a blender or food processor. Blend until mostly smooth and creamy.
    For a little more texture, simply whisk everything together instead of blending.
  4. Fill the bowls:
    Divide the cottage cheese mixture between the prepared ramekins. Scatter the cinnamon-coated apple pieces over the top and gently press a few into the batter.
  5. Bake:
    Place the bowls on a baking sheet and bake for approximately 25–30 minutes, or until the centers are set and the tops are lightly golden.
  6. Cool briefly:
    Let them rest for 5–10 minutes after removing them from the oven. They’ll firm up slightly as they cool.
  7. Serve:
    Sprinkle with extra cinnamon and add your favorite toppings. A little Greek yogurt or nut butter makes them especially delicious.

  • Using oats: Rolled oats give the bowls a heartier, slightly chewier texture.
  • Extra apple flavor: Add a pinch of nutmeg to the apple mixture.

  • Meal prep: Bake, cool, cover, and refrigerate. Reheat gently before serving.
