- 6 large eggs, separated
- 4 oz (115 g) full-fat cream cheese, softened
- ¼ tsp salt
- ¼ tsp cream of tartar
- 2 tbsp melted butter or beef tallow
- ½ tsp garlic powder, optional
- ¼ tsp onion powder, optional

1. Prepare the oven
Preheat your oven to 325°F (165°C).
Line a small loaf pan with parchment paper, leaving some overhang on the sides for easy removal. Lightly grease the parchment with butter or tallow.
2. Separate the eggs
Carefully separate the egg whites from the yolks. Place the whites in a completely clean, dry mixing bowl.
Make sure there is no yolk or grease in the whites, as this can prevent them from whipping properly.
3. Prepare the yolk mixture
In another bowl, whisk together the egg yolks, softened cream cheese, melted butter or tallow, and salt.
Add garlic powder or onion powder if using.
Mix until completely smooth and creamy with no visible lumps of cream cheese.
4. Whip the egg whites
Add the cream of tartar to the egg whites.
Using a hand mixer or stand mixer, beat the whites on medium-high speed until they form stiff peaks.
When you lift the beaters, the egg whites should stand upright without collapsing.

5. Fold the mixtures together
Add about one-third of the whipped egg whites to the yolk mixture.
Gently fold them together to lighten the yolk mixture.

6. Transfer to the loaf pan
Pour the batter into the prepared loaf pan.
Gently smooth the top with a spatula.
Avoid tapping or dropping the pan, which can knock out the air bubbles.
7. Bake
Place the loaf in the preheated oven and bake for approximately 35–45 minutes, or until the top is lightly golden and the center feels set.
If the top begins browning too quickly, loosely cover it with foil during the final portion of baking.
8. Cool completely
Remove the bread from the oven and allow it to cool in the pan for about 10 minutes.
Carefully lift it out using the parchment paper and transfer it to a cooling rack.
Allow it to cool completely before slicing. This helps the interior finish setting and gives you cleaner slices.
9. Slice and serve
Once completely cool, slice the loaf using a serrated knife.
Serve as-is, toasted lightly, or topped with butter, cream cheese, eggs, or sliced cooked meat.

💡 Tips for Soft, Fluffy Bread
Don’t overmix the egg whites. Gentle folding keeps the air trapped in the batter.
Use room-temperature cream cheese. It blends much more smoothly with the egg yolks.
Don’t slice while hot. The loaf can seem wet or fragile if cut straight from the oven.
Don’t overbake. Overbaking can make the bread dry and eggy.
For toast: Slice once completely cooled and lightly toast in a skillet with butter or tallow.
