Low-Carb Strawberry Cheesecake Wonton Bites

Crispy on the outside, creamy and sweet on the inside, these little strawberry cheesecake bites are an easy low-carb dessert. They’re perfect when you want cheesecake flavor without making an entire cheesecake!

Servings: 8 bites
Prep Time: 10 minutes
Cook Time: 8–12 minutes
Total Time: About 20 minutes

🛒 Ingredients

For the Cheesecake Filling

  • 4 oz (113 g) cream cheese, softened
  • 2 tablespoons powdered erythritol
  • 1 teaspoon vanilla extract
  • ¼ cup fresh strawberries, finely diced

For the Wonton Bites

  • 8 keto-friendly wonton wrappers
  • 1 egg, beaten
  • Olive oil or cooking spray

For Serving

  • Sugar-free keto strawberry syrup
  • Optional: a few finely diced strawberries
  • Optional: powdered erythritol for dusting

👩‍🍳 Instructions

1. Prepare the Filling

Place the softened cream cheese in a bowl. Add the powdered erythritol and vanilla extract.

Beat or whisk until the mixture is smooth, creamy, and free of lumps.

Gently fold in the finely diced strawberries. Avoid adding too much strawberry juice, as excess moisture can make the filling runny.

2. Fill the Wonton Wrappers

Lay the 8 keto wonton wrappers on a clean work surface.

Place about 1 tablespoon of cheesecake filling in the center of each wrapper. Don’t overfill them, or the filling may leak while cooking.

Brush the edges lightly with beaten egg.

3. Seal the Bites

Fold each wrapper over the filling to form a triangle or fold it into your preferred wonton shape.

Press the edges firmly with your fingers, then gently press with a fork to create a secure seal.

4. Cook Until Golden

Air Fryer Method:
Lightly spray the air-fryer basket with olive oil. Arrange the wonton bites in a single layer, leaving space between them.

Lightly spray the tops with olive oil.

Air fry at 375°F (190°C) for 6–8 minutes, or until golden and crisp. Check them early because keto wrappers can brown quickly.

Oven Method:
Preheat the oven to 400°F (200°C). Place the filled wontons on a parchment-lined baking sheet and lightly brush or spray them with olive oil.

Bake for 8–12 minutes, until golden brown and crisp.

5. Finish and Serve

Allow the bites to cool for a few minutes before serving. Drizzle lightly with sugar-free strawberry syrup and add a few fresh strawberry pieces on top.

For an extra cheesecake-style finish, dust very lightly with powdered erythritol.

🍓 Cream Cheese Notes

Use full-fat, softened cream cheese for the richest and creamiest filling. Let it sit at room temperature for about 20–30 minutes before mixing.

If the filling seems too soft, refrigerate it for 10–15 minutes before filling the wrappers. This makes the bites easier to assemble and helps prevent the filling from leaking.

  • Use keto-friendly wonton wrappers and check the package for the actual carbohydrate count, since brands vary.
  • Choose sugar-free strawberry syrup with no added sugar.
  • Powdered erythritol keeps the filling smooth without adding traditional sugar.
  • Keep the strawberry pieces small and don’t add excessive syrup to keep carbohydrates lower.
  • Serve immediately for the best crispy texture.

Tip: These are best enjoyed warm or slightly cooled, when the outside is crisp and the cheesecake center is soft and creamy.
