Hot Honey Sweet Potato Beef Bowls

A satisfying meal-prep bowl made with lean ground beef, roasted sweet potato, creamy cottage cheese, avocado, and a touch of hot honey. It delivers plenty of protein while keeping the carbs and added sweetness moderate—perfect for a filling, calorie-conscious meal.

🥣 Servings

4 bowls

⏱️ Prep Time

15 minutes

🔥 Cook Time

25–30 minutes

🛒 Ingredients

For the Beef

  • 1¼ lb (570 g) 93–95% lean ground beef
  • 1 tsp olive oil, if needed
  • 1½ tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp chili powder
  • ½ tsp cumin
  • Salt and black pepper to taste

For the Roasted Sweet Potato

  • 2 medium sweet potatoes, peeled and cut into small cubes
  • 1 tsp olive oil
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • Salt and pepper to taste

For the High-Protein Bowls

  • 1½ cups low-fat or fat-free cottage cheese
  • 1 medium avocado, divided between 4 bowls
  • 3 cups chopped lettuce or mixed greens
  • 1 cup diced cucumber
  • ¼ cup diced red onion, optional

For the Hot Honey

  • 2 tbsp hot honey, divided between 4 bowls
  • Chili flakes, optional
  • Freshly cracked black pepper

👩‍🍳 Instructions

1. Roast the Sweet Potato

Preheat the oven to 425°F (220°C).

Place the diced sweet potato on a baking sheet. Toss with olive oil, smoked paprika, garlic powder, salt, and pepper.

Spread evenly and roast for 20–25 minutes, turning once halfway through, until tender and lightly crisp around the edges.

2. Cook the Beef

Heat a large skillet over medium-high heat.

Add the lean ground beef and cook for 7–9 minutes, breaking it into small pieces as it browns.

Drain any excess fat if necessary.

Add garlic powder, smoked paprika, onion powder, chili powder, cumin, salt, and pepper. Stir and cook for another 1–2 minutes.

3. Prepare the Cottage Cheese

For a creamy sauce-like texture, blend the cottage cheese until smooth.

Alternatively, leave it chunky for a more traditional cottage-cheese bowl.

4. Build the Bowls

Divide the lettuce and cucumber between four containers.

Add approximately one-fourth of the seasoned beef and roasted sweet potato to each bowl.

Add a generous portion of cottage cheese and a few slices of avocado.

5. Finish With Hot Honey

Drizzle approximately ½ tablespoon hot honey over each bowl.

Sprinkle with chili flakes and freshly cracked black pepper.

The small amount of hot honey gives you that sweet-and-spicy flavor without turning the bowl into a high-sugar meal.

💪 High-Protein & Weight-Loss Tips

  • Choose 93–95% lean beef for plenty of protein with less fat.
  • Use low-fat or fat-free cottage cheese to increase protein without adding excessive calories.
  • Keep avocado to a measured portion because it is nutritious but calorie-dense.
  • Use a smaller sweet-potato portion and add extra lettuce or cauliflower rice for more volume.
  • Measure the hot honey instead of pouring freely.
  • For even more protein, add 2–3 tbsp Greek yogurt to the cottage cheese as a creamy topping.

🍱 Meal Prep

Prepare the beef and sweet potatoes in advance and divide into four containers.

Keep the avocado and hot honey separate until serving for the freshest texture.

Refrigerate for 3–4 days.

📊 Approximate Nutrition Per Bowl

Depending on the exact ingredients and brands:

Calories: ~475–525
Protein: 45–50 g
Net Carbs: ~25–30 g

This version is high-protein, lower-carb, and calorie-conscious, while still keeping the sweet potato and hot-honey flavor that makes the original bowl so good.
