Strawberry Cheesecake Protein Crunch Sandwiches
These Strawberry Cheesecake Protein Crunch Sandwiches taste like a sweet frozen treat with a creamy cheesecake center and a satisfying crunchy bite. They’re high in protein and easy to prepare for a quick snack or dessert.
🛒 Ingredients
- ¼ cup plain Greek yogurt
- 2 tablespoons blended cottage cheese
- ½ scoop vanilla protein powder
- 1 teaspoon zero-sugar sweetener, or to taste
- 2 tablespoons finely diced fresh strawberries
- 4 small high-protein crackers
- ½ teaspoon vanilla extract
- 1 tablespoon crushed high-protein crackers or nuts, optional
- ½ teaspoon lemon zest, optional
👩🍳 Instructions
1. Make the cheesecake filling
Add Greek yogurt, blended cottage cheese, vanilla protein powder, zero-sugar sweetener, and vanilla extract to a small bowl. Mix until completely smooth and creamy.
2. Add the strawberries
Fold in the finely diced strawberries and optional lemon zest. Mix gently so the strawberries remain chunky.
3. Assemble the sandwiches
Place 2 high-protein crackers on a plate. Spoon the strawberry cheesecake mixture evenly over each cracker, then gently press the remaining crackers on top to create two sandwiches.
4. Add extra crunch
For more texture, lightly press the edges into crushed high-protein crackers or finely chopped nuts.
5. Chill
Place the sandwiches in the freezer for 20–30 minutes for a firmer, frozen-treat texture. For a softer cheesecake filling, refrigerate for about 30 minutes instead.
🍓 Serving Tip
Let the sandwiches sit at room temperature for 2–3 minutes before eating if frozen. Serve with a few fresh strawberry pieces on top.
Protein tip: Choose Greek yogurt, cottage cheese, protein powder, and crackers with minimal added sugar to keep the recipe protein-rich and lower in added sugar.
