- 2 cups (450 g) plain Greek yogurt
- 1 scoop (25β30 g) vanilla protein powder
- 1 tsp vanilla extract
- 1β2 tbsp monk fruit sweetener, to taste
- 3 tbsp natural peanut butter, unsweetened
- Pinch of salt, optional

- Prepare the yogurt mixture: Add Greek yogurt, vanilla protein powder, vanilla extract, monk fruit sweetener, and salt to a bowl. Stir until completely smooth and creamy.
- Spread: Line a baking sheet or flat freezer-safe tray with parchment paper. Spread the yogurt mixture into an even layer, about ΒΌβΒ½ inch thick.
- Add peanut butter: Gently warm the peanut butter for a few seconds if needed. Drizzle it over the yogurt and swirl with a knife or toothpick.
- Freeze: Place the tray flat in the freezer for 3β4 hours, or until completely firm.
- Break: Remove from the freezer, let it sit for 2β5 minutes, then break or cut into bark-sized pieces.
- Store: Keep the pieces in an airtight freezer container or bag for up to 2β3 weeks.
