🛒 Ingredients
For the Meatloaf
- 2 lbs (900 g) ground beef
- 1 cup almond flour
- 2 large eggs
- ½ cup finely chopped onion
- ½ cup finely chopped green bell pepper
- ¼ cup sugar-free ketchup
- 2 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
For the Keto Glaze
- ¼ cup sugar-free ketchup
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1–2 tsp monk fruit sweetener, optional
- ½ tsp smoked paprika, optional
👩🍳 Instructions
- Preheat the oven to 350°F (175°C). Line a loaf pan or baking sheet with parchment paper.
- Prepare the vegetables: Finely chop the onion and green bell pepper. For an especially tender meatloaf, sauté them in a small amount of oil over medium heat for 3–4 minutes until slightly softened. Let them cool.
- Make the meat mixture: In a large bowl, combine the ground beef, almond flour, eggs, onion, bell pepper, sugar-free ketchup, Dijon mustard, Worcestershire sauce, salt, and black pepper.
- Mix gently with your hands or a large spoon just until everything is evenly combined. Avoid overmixing, which can make the meatloaf dense.
- Shape the loaf: Transfer the mixture to the prepared pan and gently shape it into an even loaf. If using a baking sheet, form a loaf approximately 2–3 inches thick.
- Make the glaze: Mix the sugar-free ketchup, Dijon mustard, Worcestershire sauce, monk fruit sweetener, and smoked paprika in a small bowl.
- First bake: Spread about half of the glaze over the top of the meatloaf. Bake uncovered for approximately 45 minutes.
- Add more glaze: Remove the meatloaf and spread the remaining glaze over the top.
- Finish baking: Return to the oven and bake for another 15–25 minutes, or until the center reaches 160°F (71°C).
- Rest before slicing: Let the meatloaf rest for 10–15 minutes before slicing. This helps the juices redistribute and makes cleaner slices.
