These tender cabbage dumplings are a lighter alternative to traditional dumplings. Soft blanched cabbage leaves are wrapped around a flavorful filling of sautéed vegetables, garlic, and ginger, then steamed until juicy and tender. Serve them with a savory chili-soy dipping sauce for an easy appetizer, snack, or light meal.

Makes 10–12 dumplings
For the Dumplings
- 10–12 large cabbage leaves
- 1 cup finely chopped mushrooms
- ½ cup finely shredded carrots
- ½ cup finely chopped bell pepper
- ½ cup finely shredded cabbage
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 green onions, finely chopped
- 1 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- ½ tsp black pepper
- ¼ tsp salt, or to taste
- 1 tsp olive oil
For the Chili-Soy Dip
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp chili sauce or chili flakes
- ½ tsp grated fresh ginger
- 1 small garlic clove, minced
- 1 green onion, finely sliced
👩🍳 Instructions
1. Blanch the cabbage leaves
Bring a large pot of water to a boil. Carefully add the cabbage leaves and blanch for 1–2 minutes, just until they become soft and flexible.
Transfer them immediately to a bowl of cold water to stop the cooking process. Drain and pat dry.
Trim the thick center rib slightly if necessary so the leaves are easier to roll.
2. Prepare the vegetable filling
Heat olive oil in a skillet over medium heat. Add the mushrooms, carrots, bell pepper, and shredded cabbage.
Cook for 4–5 minutes, stirring occasionally, until the vegetables soften and most of their moisture has evaporated.
3. Add aromatics and seasoning
Add the garlic, ginger, and green onions. Cook for another 1 minute.
Stir in the soy sauce, sesame oil, and black pepper. Taste and add a little salt if needed. Remove from the heat and allow the filling to cool slightly.
4. Fill the cabbage leaves
Place one cabbage leaf flat on a clean surface. Add approximately 1–2 tablespoons of filling near the bottom center.
Fold the sides inward, then roll the cabbage tightly upward, just like making a small spring roll.
Repeat with the remaining leaves and filling.
5. Steam the dumplings
Arrange the cabbage dumplings seam-side down in a steamer basket, leaving a little space between them.
Cover and steam over simmering water for 8–10 minutes, until the cabbage is tender and the filling is hot.
6. Make the dipping sauce
While the dumplings steam, combine the soy sauce, rice vinegar, sesame oil, chili sauce, ginger, garlic, and green onion in a small bowl.
Stir well and adjust the chili level to taste.
7. Serve
Transfer the hot cabbage dumplings to a serving plate. Sprinkle with extra green onions or sesame seeds if desired.
Serve immediately with the chili-soy dipping sauce.

For more flavor or protein, add:
- Finely chopped cooked chicken
- Ground turkey or lean pork
- Shelled edamame
- Chopped shrimp
- Tofu
- A pinch of red pepper flakes
💡 Light & Low-Carb Tip
The cabbage wrapper makes these much lighter than flour-based dumplings. For a lower-carb version, use a reduced-sodium soy sauce or coconut aminos and keep the filling focused on mushrooms, cabbage, and protein-rich vegetables.
