Golden, crunchy, and savory on the outside with juicy mushrooms inside, these high-protein, low-carb crispy mushrooms are perfect as a snack, appetizer, side dish, or light meal. The almond flour and Parmesan coating keeps them low in carbs while Greek yogurt and eggs add extra protein.

Mushrooms
- 1 lb (450 g) fresh mushrooms
- ½ cup almond flour
- ¼ cup finely grated Parmesan cheese
- ½ cup plain, unsweetened Greek yogurt
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1–2 tbsp olive or avocado oil, for spraying
Optional High-Protein Dip
- ½ cup plain Greek yogurt
- 1 tsp lemon juice
- ½ tsp garlic powder
- ½ tsp dried dill or parsley
- Salt and pepper, to taste

1. Clean and dry the mushrooms
Wipe the mushrooms with a damp paper towel or quickly rinse them under cold water. Pat them very dry with paper towels.
Excess moisture can prevent the coating from becoming crispy.
If using large mushrooms, cut them in half. Small mushrooms can remain whole.
2. Prepare the coating
In a shallow bowl, whisk together the eggs and Greek yogurt until completely smooth.
In a second shallow bowl, combine the almond flour, Parmesan, garlic powder, Italian seasoning, paprika, salt, and black pepper.
Mix the dry coating thoroughly so the seasonings are evenly distributed.
3. Coat the mushrooms
Dip each mushroom into the egg and Greek yogurt mixture.
Lift it out and allow the excess coating to drip back into the bowl.
Immediately place the mushroom into the almond flour mixture. Roll it around and gently press the coating onto all sides.
Repeat until all the mushrooms are coated.
4. Chill the coated mushrooms
For an extra-crispy coating, place the coated mushrooms on a parchment-lined plate or tray and refrigerate for 10–15 minutes.
This helps the coating adhere better during cooking.
5. Air-fry
Preheat your air fryer to 400°F (200°C) for about 3 minutes.
Arrange the mushrooms in a single layer, leaving space between them. Lightly spray with olive or avocado oil.
Air fry for 10–14 minutes, turning them carefully halfway through.
They’re ready when the coating is golden brown and crisp.
6. Oven-baked option
Preheat the oven to 425°F (220°C).
Place the mushrooms on a parchment-lined baking sheet with a little space between each one. Lightly spray with oil.
Bake for 18–22 minutes, turning halfway through, until golden and crispy.
For extra browning, broil for 1–2 minutes at the end, watching closely.
7. Make the protein dip
While the mushrooms cook, combine Greek yogurt, lemon juice, garlic powder, dill or parsley, salt, and pepper.
Stir until smooth and refrigerate until ready to serve.
8. Serve
Let the mushrooms cool for 2–3 minutes so the coating firms up.
Serve immediately with the Greek-yogurt dip.
