High-Protein Tuna Melt
This High-Protein Tuna Melt is creamy, cheesy, crispy, and incredibly satisfying. The tuna is mixed with Greek yogurt, a little light mayonnaise, crunchy vegetables, pickles, and mustard, then layered with melted cheese and toasted whole-wheat bread. It makes an easy protein-rich lunch or dinner that comes together in about 20 minutes.

Ingredients
For the Tuna Filling
- 1 can tuna in water, drained, about 140–150 g
- ½ cup plain Greek yogurt
- 1 tbsp light mayonnaise
- 2 tbsp finely chopped red onion
- 2 tbsp finely chopped cucumber or celery
- 1 tbsp finely chopped pickles
- 1 tsp yellow or Dijon mustard
- ¼ tsp garlic powder, optional
- Salt, to taste
- Black pepper, to taste
For the Sandwich
- 4 slices whole-wheat bread
- 2–4 slices reduced-fat cheddar or mozzarella cheese
- 1 tsp butter or olive oil, for toasting
Instructions
1. Drain the Tuna
Open the tuna and drain it thoroughly. Press out as much excess water as possible using a fork. This helps prevent the tuna mixture from becoming watery and keeps the sandwich crisp.
Transfer the tuna to a medium mixing bowl and gently flake it apart with a fork.
2. Prepare the Creamy Tuna Mixture
Add the Greek yogurt, light mayonnaise, mustard, chopped red onion, cucumber or celery, and pickles to the tuna.
If using garlic powder, add it now.
Season with salt and freshly ground black pepper. Stir everything together until the ingredients are evenly distributed and the tuna is creamy but still slightly chunky.
Taste and adjust the seasoning if needed. For a sharper flavor, add a little more mustard or pickle.
3. Prepare the Bread
Lay the four slices of whole-wheat bread on a clean surface.
Spread the tuna mixture evenly over two slices, leaving a small border around the edges so the filling doesn’t spill out while cooking.
Place the cheese evenly over the tuna mixture. Use 1–2 slices per sandwich depending on how cheesy you want it.
Top with the remaining slices of bread.
4. Toast the Sandwiches
Heat a skillet or nonstick frying pan over medium-low heat.
Lightly butter or brush the outside of each sandwich with a small amount of butter or olive oil.
Place the sandwiches in the warm skillet.
Cook for approximately 3–4 minutes on the first side, or until the bread is golden brown and crisp.
Carefully flip the sandwiches and cook for another 2–4 minutes.
Keep the heat at medium-low rather than high. This allows the bread to become crisp while giving the cheese enough time to melt without burning the bread.
For extra-melty cheese, cover the skillet with a lid for the final 1–2 minutes.
5. Rest and Slice
Transfer the tuna melts to a cutting board and let them rest for about 1 minute.
Slice each sandwich in half and serve immediately while the bread is crisp and the cheese is melted.
Optional Additions
You can customize the filling with:
- Chopped green onions
- Diced jalapeño for heat
- A squeeze of fresh lemon juice
- Smoked paprika
- Dried dill
- Chopped parsley
- A small amount of hot sauce
- Thinly sliced tomato, added just before cooking
Tips for the Best Tuna Melt
Drain the tuna well: Excess liquid can make the filling soggy.
Don’t use high heat: Medium-low heat gives you crispy bread and properly melted cheese.
Use thick Greek yogurt: It creates a creamy filling without requiring a large amount of mayonnaise.
For extra protein: Choose a high-protein whole-wheat bread and use Greek yogurt with a higher protein content.
For a lighter version: Use nonfat Greek yogurt, light cheese, and a minimal amount of oil or butter for toasting.
