Keto Peanut Butter Chocolate Cookies
Rich, fudgy, chocolatey, and naturally peanut-buttery, these easy keto cookies require just 4 simple ingredients. They’re perfect when you want a quick sugar-free dessert without flour.
Ingredients
- 1 cup natural creamy peanut butter, no added sugar
- ⅓ cup powdered erythritol or monk fruit sweetener
- 1 large egg
- ⅓ cup unsweetened cocoa powder
- Optional: ½ tsp vanilla extract
- Optional: Pinch of salt, especially if using unsalted peanut butter
Instructions
- Preheat the oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. - Make the cookie dough
Add the peanut butter, powdered sweetener, egg, and unsweetened cocoa powder to a medium mixing bowl.
Stir with a spatula until everything is completely combined and a thick, soft dough forms. If using, mix in the vanilla and a pinch of salt.
- Portion the cookies
Scoop out approximately 1 tablespoon of dough per cookie and place the portions on the prepared baking sheet, leaving space between them. - Flatten and shape
Gently roll each portion into a ball. Flatten each ball with the back of a fork, making a simple crisscross pattern.
If the dough feels sticky, lightly chill it for 10–15 minutes before shaping.
- Bake
Bake for approximately 8–10 minutes. The cookies should look set around the edges but still be slightly soft in the center.
Be careful not to overbake—this helps keep them fudgy rather than dry.
- Cool completely
Remove the baking sheet from the oven and let the cookies cool on the tray for 5–10 minutes. Then transfer them to a wire rack and allow them to cool completely.
They will firm up as they cool.

Storage
