Ingredients
For the meatloaf cupcakes
- 1½ lb (680 g) lean ground beef (90–93% lean)
- 6 slices thin-cut bacon, halved
- 1 large egg
- ½ cup finely grated Parmesan cheese
- 2 tablespoons almond flour
- ½ small onion, finely minced
- 2 cloves garlic, minced
- 1 tablespoon sugar-free BBQ sauce
- 1 teaspoon Worcestershire sauce (check for added sugar)
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper, to taste
For the sugar-free smoky BBQ glaze
- ¼ cup sugar-free BBQ sauce
- 1 teaspoon Dijon mustard
- ½ teaspoon smoked paprika
- 1 teaspoon apple cider vinegar
- 1–2 tablespoons water, as needed
For the cauliflower mash frosting
- 1 medium cauliflower, cut into florets (about 500–600 g)
- 2 tablespoons cream cheese
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon butter
- Salt and black pepper, to taste
- ¼ teaspoon garlic powder
Instructions
1. Prepare the meat mixture
Preheat the oven to 375°F (190°C). In a bowl, combine ground beef, egg, Parmesan, almond flour, onion, garlic, sugar-free BBQ sauce, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix gently until combined.
2. Shape the cupcakes
Lightly grease a 6-cup jumbo muffin tin or use a standard muffin tin for smaller portions. Line each cup with two half-slices of bacon, then divide the beef mixture evenly among the cups.
3. Bake the meatloaf
Bake for approximately 25–35 minutes, depending on size. Drain excess grease if needed. The center of the ground beef must reach 160°F (71°C). Broil for 1–2 minutes if needed to crisp the bacon, watching closely.
4. Make the low-carb BBQ glaze
Combine sugar-free BBQ sauce, Dijon mustard, smoked paprika, apple cider vinegar, and water in a small saucepan. Warm over low heat for 3–4 minutes until smooth and glossy.
5. Make the cauliflower frosting
Steam the cauliflower until very tender, about 10–15 minutes. Drain thoroughly and let excess moisture evaporate. Blend with cream cheese, Parmesan, butter, garlic powder, salt, and pepper until smooth. If the mash is too soft for piping, chill it briefly or add a little more Parmesan.
6. Frost and serve
Rest the meatloaf cupcakes for 5 minutes. Pipe the cauliflower mash on top using a piping bag or spoon it on in a swirl. Drizzle with the warm BBQ glaze and garnish with parsley. Serve immediately.
