Ingredients
For the crust
- ¼ cup granulated erythritol
- 1½ cups almond flour
- ¼ cup unsalted butter, melted
- ½ teaspoon vanilla extract
- Pinch of salt
For the creamy filling
- 8 oz (225 g) cream cheese, softened
- ½ cup powdered erythritol or monk fruit sweetener
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup heavy whipping cream, cold
For the strawberry layer
- 1½ cups fresh strawberries, hulled and thinly sliced
- 2 tablespoons powdered erythritol, or to taste
- ½ teaspoon lemon juice
Optional topping
- ½ cup whipped heavy cream
- 2–3 fresh strawberries, sliced
- A little grated sugar-free white chocolate
Instructions
1. Prepare the crust
In a bowl, combine the almond flour, erythritol, melted butter, vanilla extract, and salt. Mix until the mixture resembles damp crumbs. Press firmly into the bottom of an 8-inch square dish lined with parchment paper. Refrigerate for 20–30 minutes to help it set.
2. Prepare the strawberries
Place the sliced strawberries in a bowl with the sweetener and lemon juice. Toss gently and let them sit for 10 minutes. Drain any excess liquid to prevent the cake from becoming watery.
3. Make the cream cheese filling
Beat the softened cream cheese with powdered erythritol, vanilla extract, and lemon juice until smooth and creamy. Scrape down the sides of the bowl as needed.
4. Whip the cream
In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
5. Assemble the cake
Spread half of the cream cheese filling evenly over the chilled crust. Arrange half of the sliced strawberries over the filling. Spread the remaining filling on top, followed by the remaining strawberries.
6. Chill until firm
Cover the dish and refrigerate for at least 4–6 hours, preferably overnight, until the layers are firm and easy to slice.
7. Garnish and serve
Add whipped cream, fresh strawberry slices, or sugar-free white chocolate if desired. Cut into 9 portions and serve chilled.
