Cottage Cheese Flatbread
This soft, flexible cottage cheese flatbread is an easy, protein-packed alternative to traditional bread. Made with just a few simple ingredients, it works beautifully for sandwiches, wraps, roll-ups, and low-carb pizza. It’s naturally gluten-free when using certified gluten-free seasonings and contains no traditional flour.
Prep Time: 5 minutes Cook Time: 30–40 minutes Total Time: 35–45 minutes Servings: 2 flatbreads
Ingredients
- 1 cup (225 g) cottage cheese
- 2 large eggs
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ teaspoon Italian seasoning
- Pinch of salt
- Pinch of black pepper
Optional: 2 tablespoons grated Parmesan cheese for extra flavor.
Instructions
1. Preheat the oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Blend the ingredients
Add the cottage cheese, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper to a blender. Blend until completely smooth and creamy, with no visible cottage cheese curds.
3. Shape the flatbread
Pour the mixture onto the prepared baking sheet. Spread it into a thin, even rectangle, approximately ¼ inch thick. Avoid making the edges too thin, as they may become brittle.
4. Bake until set
Bake for 30–40 minutes, or until the flatbread is set, lightly golden, and firm enough to lift without falling apart. Baking time may vary depending on the thickness and moisture content.
5. Cool completely
Remove from the oven and let the flatbread cool on the baking sheet for 5–10 minutes. Carefully peel it away from the parchment paper once it has firmed up.
6. Fill and serve
Cut into two portions and use as sandwich bread or wraps. Fill with grilled chicken, turkey, lettuce, cucumber, cheese, or your favorite low-carb ingredients.

Tips for the Best Flatbread
- Blend thoroughly: A smooth mixture helps the flatbread bake evenly.
- Use parchment paper: This makes removal much easier.
- Don’t underbake: The center should be set before removing it from the oven.
- Cool before peeling: The flatbread becomes more flexible and less fragile as it cools.
- Store properly: Refrigerate in an airtight container for up to 3 days. Reheat gently in a skillet or microwave.
