Ingredients
- 2 large eggs
- 80 g cottage cheese
- 60 g cooked turkey breast, chopped
- 1 handful baby spinach, roughly chopped
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons shredded mozzarella cheese (optional)
- A little olive oil spray for greasing
Instructions
1. Preheat the air fryer
Preheat the air fryer to 350°F (175°C) for 2–3 minutes, if your model recommends preheating.
2. Prepare the egg mixture
Crack the eggs into a bowl and whisk until combined. Add the cottage cheese, salt, and black pepper. Mix well.
3. Add the filling
Stir in the chopped cooked turkey and baby spinach. If desired, add the shredded mozzarella for extra cheesiness and flavor.
4. Fill the baking dish
Lightly grease a small, air-fryer-safe ramekin or baking dish. Pour in the egg mixture, making sure the ingredients are evenly distributed. Leave a little space at the top for the eggs to rise.
5. Air fry
Place the dish carefully in the air fryer basket. Cook at 350°F (175°C) for approximately 8–12 minutes, depending on the depth of the dish and your air fryer. Check the center; continue cooking in 1–2-minute increments if it is still runny. The egg mixture should be fully set and reach 160°F (71°C).
6. Rest and serve
Carefully remove the hot dish and let it rest for 2 minutes. Serve warm, with extra black pepper or fresh herbs if desired.

Tips for the Best Results
- Use lean, fully cooked turkey breast for a high-protein meal.
- Drain watery cottage cheese if needed to prevent a soggy texture.
- Chop the spinach finely so it mixes evenly.
- Use a shallow ramekin for faster, more even cooking.
- Avoid overcooking, as the eggs can become rubbery.
Why you’ll love it: This easy, single-serving meal provides around 30 g of protein with relatively few carbohydrates, making it a great option for a high-protein, low-carb eating plan.
