Prep: 10 min
Cook: 25 min
Serves: 4
Ingredients
- 400 g (about 4 cups) fresh mushrooms, sliced
- 400 g cooked chicken breast, shredded or diced
- ½ small onion, finely chopped
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy whipping cream
- ½ cup grated Parmesan cheese
- 2 tbsp cream cheese, softened
- 1 tbsp olive oil or butter
- 1 tsp dried thyme
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped
Instructions
1. Sauté the onion: Heat the olive oil or butter in a large pot over medium heat. Add the chopped onion and cook for 2–3 minutes until softened.
2. Brown the mushrooms: Add the sliced mushrooms and cook for 6–8 minutes, stirring occasionally, until their moisture evaporates and the mushrooms turn golden.
3. Add garlic and herbs: Stir in the minced garlic and thyme. Cook for 30–60 seconds until fragrant.
4. Add the chicken broth: Pour in the chicken broth and bring to a gentle simmer. Cook for 4–5 minutes to develop the flavor.
5. Make it creamy: Lower the heat and stir in the heavy cream and softened cream cheese. Whisk gently until the cream cheese dissolves into the broth.
6. Add the chicken: Stir in the cooked chicken breast. Simmer gently for 5–7 minutes until heated through. Avoid boiling vigorously.
7. Add Parmesan: Stir in the grated Parmesan until melted. Season with salt and black pepper to taste.
8. Finish and serve: Sprinkle with fresh parsley and serve hot. For a thicker soup, blend a small portion of the mushrooms and broth before adding the chicken and cream.
