Easy Crustless Spinach Quiche

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 small sweet onion, diced
  • 4 oz mushrooms, sliced (optional)
  • 3 cups fresh spinach, chopped
  • 5 large eggs
  • ½ cup milk
  • ¾ cup shredded mozzarella or Swiss cheese
  • ¼ cup crumbled feta cheese
  • Salt and black pepper, to taste
  • ¼ tsp garlic powder (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and mushrooms, if using, and sauté for 4–5 minutes until softened.
  3. Add chopped spinach and cook for 1–2 minutes until wilted. Remove from heat and drain any excess liquid.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  5. Stir in mozzarella or Swiss cheese, crumbled feta, and the cooked spinach mixture.
  6. Pour the mixture into the prepared pie dish and spread evenly.
  7. Bake for 30–40 minutes, or until the center is set and the top is lightly golden.
  8. Let rest for 5–10 minutes before slicing and serving.

Serving: 6 slices Prep time: 15 minutes Cook time: 30–40 minutes

Nutrition estimate per serving: 150–180 calories, 10–12 g protein, 3–5 g carbohydrates, depending on the milk and cheese used.

Low-carb tip: Use unsweetened almond milk instead of regular milk to reduce carbohydrates. This crustless quiche is naturally low-carb and can fit a keto diet depending on portion size and ingredients.
