Instructions
1. Preheat the oven
Preheat your oven to 350Β°F (175Β°C). Line a muffin pan with 8 cupcake liners and set aside.
2. Mix the dry ingredients
In a large bowl, whisk together the almond flour, cocoa powder, protein powder, sweetener, baking powder, and salt until evenly combined.
3. Add the wet ingredients
In another bowl, whisk the eggs, Greek yogurt, almond milk, and vanilla. Add the wet mixture to the dry ingredients and stir until just combined. The batter should be thick but spoonable.
4. Fill the cupcake liners
Divide the batter evenly among the 8 liners, filling each about two-thirds full. Smooth the tops gently with a spoon.
5. Bake the cupcakes
Bake for 15β18 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Avoid overbaking, as protein powder can make cupcakes dry. Cool completely before frosting.
6. Make the protein frosting
Beat the softened cream cheese with the powdered sweetener and vanilla until smooth. Mix in the Greek yogurt and a few drops of orange coloring. Refrigerate for 15β20 minutes to help it firm up.
7. Decorate for Halloween
Spread or pipe the orange frosting onto the cooled cupcakes. Drizzle melted sugar-free chocolate in spiderweb patterns, add chocolate chips, or make spooky faces with decorating gel. Refrigerate until ready to serve.
