Spooky Pizza Pumpkins
🎃 Spooky Pizza Pumpkins — High-Protein, Low-Carb & Sugar-Free
Prep: 8 minutes · Cook: 12 minutes · Makes: 6 mini pizzas
These spooky mini pizzas have a golden, cheesy crust, sugar-free pizza sauce, mozzarella, colorful peppers, and black olives. This version is inspired by your picture and uses a low-carb, high-protein crust instead of regular pizza dough.
Ingredients
For the high-protein crust
- 1½ cups (170 g) shredded mozzarella cheese
- ¾ cup (75 g) almond flour
- 1 large egg
- ¼ cup (25 g) unflavored whey protein isolate
- 2 tbsp cream cheese
- ½ tsp baking powder
- ½ tsp garlic powder
- ½ tsp Italian seasoning
For the toppings
- ⅓ cup (80 ml) no-added-sugar pizza sauce
- ¾ cup (85 g) shredded mozzarella cheese
- ¼ cup finely chopped red bell pepper
- ¼ cup finely chopped green bell pepper
- 2 tbsp sliced black olives
- ½ tsp Italian seasoning
- Pinch of chili flakes, optional
Instructions
1. Preheat the oven. Heat to 400°F (200°C). Line a baking sheet with parchment paper.
2. Melt the cheese. Combine the 1½ cups mozzarella and cream cheese in a microwave-safe bowl. Heat in 20–30 second intervals, stirring until melted and smooth.
3. Make the dough. Allow the cheese to cool slightly. Mix in the egg, almond flour, whey protein isolate, baking powder, garlic powder, and Italian seasoning. Knead until a dough forms. If sticky, let it rest for 2–3 minutes.
4. Shape the mini pizzas. Divide the dough into 6 equal portions. Flatten each into a small round and pinch the edges into pumpkin-like shapes, or make round mini pizzas as shown in the picture.
5. Pre-bake the crusts. Bake for 5–6 minutes until the bases begin to set.
6. Add the sauce. Spread a thin layer of sugar-free pizza sauce over each crust, leaving a small border.
7. Add cheese and vegetables. Sprinkle with the remaining mozzarella. Decorate with red and green pepper strips and sliced olives to create spooky pumpkin faces.
8. Bake again. Return to the oven for 5–7 minutes, until the cheese is bubbly and the edges are golden. Make sure the crusts are fully cooked.
9. Serve. Sprinkle with Italian seasoning or chili flakes and serve warm.
