Ingredients
- ¾ cup natural creamy peanut butter (no added sugar)
- ½ cup vanilla protein powder (whey or casein)
- ½ cup powdered monk fruit sweetener
- ½ cup plain nonfat Greek yogurt
- 2 tablespoons unsweetened almond milk (as needed)
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 tablespoon melted coconut oil (optional, for a firmer texture)
Instructions
1. Prepare the pan
Line an 8 × 8-inch baking dish or a smaller square container with parchment paper. Leave some paper hanging over the sides for easy removal.
2. Mix the peanut butter
In a medium mixing bowl, add the natural peanut butter, Greek yogurt, vanilla extract, and powdered monk fruit sweetener. Mix until smooth and creamy.
3. Add the protein powder
Gradually add the protein powder and salt. Stir until a thick, smooth mixture forms.
4. Adjust the consistency
Add almond milk one tablespoon at a time until the mixture becomes thick but spreadable. Avoid adding too much liquid.
5. Transfer to the pan
Spread the peanut butter mixture evenly into the prepared baking dish. Smooth the top with a spatula.
6. Chill until firm
Place the dish in the refrigerator for at least 2 hours, or until the fudge is firm enough to slice.
