Keto Double Truffle Smash Burger
Keto Double Truffle Smash Burger
1/ Ingredients
Burgers:
1/ Ground beef (80/20) – 1 lb
2/ Cheddar cheese slices – 4 slices
3/ Olive oil – 1 tbsp
4/ Salt and cracked black pepper – to taste
Truffle Mushroom Sauce:
1/ Sliced wild mushrooms (like oyster or shiitake) – 1 cup
2/ Butter – 2 tbsp
3/ Heavy cream – 1/3 cup
4/ Cream cheese – 1 tbsp
5/ Truffle oil – 1 tsp
6/ Freshly ground black pepper – 1/2 tsp
2/ Directions
1/ Sear the Mushrooms:
Heat a skillet with butter over medium-high heat. Toss in the sliced mushrooms and cook until they are beautifully golden brown and fragrant. Remove half of them to a plate to use as a rustic topping later.
Tip: Don’t crowd the pan so the mushrooms get a gorgeous buttery sear instead of just steaming in their own juices.
2/ Make the Truffle Sauce:
In the same pan with the remaining half of the mushrooms, lower the heat and whisk in the heavy cream, cream cheese, and black pepper. Simmer gently until the sauce becomes thick, bubbly, and velvety. Remove from heat and stir in the truffle oil. Keep it warm.
Tip: Add the truffle oil right at the very end to keep its delicate, earthy aroma perfectly intact.
3/ Smash the Burgers:
Form the ground beef into four loose balls. Place them onto a screaming hot, lightly oiled skillet and press them completely flat with a sturdy spatula. Season generously with salt and pepper. Cook until a dark, crusty edge forms, flip them over, and immediately melt a slice of cheddar onto each patty.
Tip: Use a piece of parchment paper under your spatula so the raw meat doesn’t stick to it when you smash down.
4/ Stack and Drizzle:
Stack two cheesy patties on top of each other on a plate. Pour that rich, warm truffle mushroom sauce generously over the top, letting it cascade down the sides. Crown the whole stack with the reserved seared mushrooms and dig right in!
Tip: Keep some napkins close by, this is gloriously messy comfort food at its absolute best.

6/ Additional Tips for Success
1/ Make sure your skillet is extra hot before smashing the burgers to get that signature diner-style crispy crust.
2/ Always use a high-fat ground beef like 80/20 for the juiciest, most flavorful patties that won’t dry out.
3/ If the truffle cream sauce gets a little too thick while the burgers cook, just splash in a tiny bit more heavy cream to loosen it back up to pouring consistency.
