Instructions
1. Prepare the Oven
Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease each cup.
2. Mix the Dry Ingredients
In a large bowl, whisk together almond flour, coconut flour, monk fruit sweetener, baking powder, cinnamon, and salt.
3. Mix the Wet Ingredients
In another bowl, whisk eggs, almond milk, melted butter, and vanilla extract until smooth.
4. Make the Muffin Batter
Pour the wet ingredients into the dry ingredients. Stir until a thick, smooth batter forms. Let it rest for 3–5 minutes.

In a separate bowl, beat softened cream cheese, powdered monk fruit sweetener, vanilla extract, and egg yolk until creamy and smooth.
6. Fill the Muffin Cups
Spoon approximately 1 tablespoon of muffin batter into each muffin liner. Add a spoonful of cream cheese filling to the center, then cover with another tablespoon of muffin batter.
7. Add Cinnamon Topping
Mix melted butter, monk fruit sweetener, and cinnamon. Lightly brush or drizzle over the muffin tops.
8. Bake
Bake for 20–25 minutes, until the tops are golden and a toothpick inserted into the muffin portion comes out clean.
9. Cool
Allow muffins to cool in the pan for 10 minutes before transferring to a wire rack. Let the cream cheese centers set before serving.
