Prep Time: 15 minutes
Cook Time: 25–30 minutes
Total Time: 45 minutes
Servings: 2 small baguettes (about 8 slices each)
Ingredients
- 1½ cups almond flour
- ¼ cup coconut flour
- 2 tbsp psyllium husk powder
- 1 tbsp baking powder
- ½ tsp salt
- 4 large eggs, room temperature
- ½ cup warm water
- 2 tbsp olive oil or melted butter
- 1 tsp apple cider vinegar
- Sesame seeds for topping (optional)
Instructions
1. Prepare the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Mix the Dry Ingredients
In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Whisk thoroughly to remove any lumps.
3. Prepare the Wet Ingredients
In a separate bowl, whisk together eggs, warm water, olive oil, and apple cider vinegar until smooth.
4. Combine Everything
Gradually pour the wet ingredients into the dry ingredients. Stir with a spatula until a thick, slightly sticky dough forms.
Let the dough rest for 5–10 minutes so the psyllium husk can absorb the moisture.
5. Shape the Baguettes
Divide the dough into 2 equal portions. Shape each portion into a long baguette-style loaf using slightly damp hands.
Place both loaves on the prepared baking sheet.
6. Score the Bread
Use a sharp knife to make 3–4 diagonal cuts across the top of each baguette. Sprinkle with sesame seeds if desired.
7. Bake
Bake for 25–30 minutes, or until the baguettes are firm, golden brown, and cooked through.
8. Cool Completely
Remove from the oven and let cool for at least 20–30 minutes before slicing. This helps the bread develop its proper texture.
9. Serve
Slice and enjoy with butter, cream cheese, scrambled eggs, cheese, or your favorite sandwich fillings.
