Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
Servings: 6 tortillas
Ingredients
- 2 medium zucchini (approximately 2 cups grated)
- 2 large eggs
- ½ cup shredded mozzarella cheese
- ¼ cup finely grated Parmesan cheese
- ¼ cup almond flour
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil (for cooking, as needed)
Instructions
- Prepare the zucchini: Wash and trim the zucchini. Grate using a box grater.
- Remove excess moisture: Place grated zucchini in a clean kitchen towel or cheesecloth. Squeeze firmly to remove as much liquid as possible. This step is important for preventing soggy tortillas.
- Mix the ingredients: Transfer zucchini to a mixing bowl. Add eggs, mozzarella, Parmesan, almond flour, garlic powder, Italian seasoning, salt, and black pepper.
- Combine: Mix everything thoroughly until a thick, slightly sticky batter forms.
- Prepare the baking tray: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it.
- Shape tortillas: Divide the mixture into 6 equal portions. Spread each portion into a thin circle, approximately 5–6 inches wide.
- Bake: Bake for 15–20 minutes, until the edges turn lightly golden and the centers are set.
- Cool slightly: Let tortillas rest for 3–5 minutes before carefully removing them from the parchment paper.
- Make them flexible: For softer tortillas, briefly warm each one in a lightly oiled skillet for 20–30 seconds per side.
- Serve: Fill with grilled chicken, beef, cheese, lettuce, avocado, or your favorite low-carb fillings.
