- 2 tablespoons rice vinegar
- 1 tablespoon Sriracha sauce (adjust to taste)
- 1 tablespoon erythritol or your preferred keto-friendly sweetener
- 1 cup shiitake mushrooms, finely chopped
- 1/4 cup green onions, finely chopped
- 1/4 cup water chestnuts, finely chopped (optional, for crunch)
- Salt and pepper to taste
- Butter lettuce leaves (or any sturdy lettuce leaves for wrapping)

- Cook Ground Chicken:
- Heat sesame oil in a large skillet over medium heat.
- Add ground chicken and cook until browned, breaking it apart with a spatula as it cooks.
