Ingredients:

  • 1 pound ground chicken
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce or tamari (for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon Sriracha sauce (adjust to taste)
  • 1 tablespoon erythritol or your preferred keto-friendly sweetener
  • 1 cup shiitake mushrooms, finely chopped
  • 1/4 cup green onions, finely chopped
  • 1/4 cup water chestnuts, finely chopped (optional, for crunch)
  • Salt and pepper to taste
  • Butter lettuce leaves (or any sturdy lettuce leaves for wrapping)

Instructions:

  1. Cook Ground Chicken:
    • Heat sesame oil in a large skillet over medium heat.
    • Add ground chicken and cook until browned, breaking it apart with a spatula as it cooks.
  2. Add Aromatics:
    • Add minced garlic and ginger to the skillet and sauté for 1-2 minutes until fragrant.
  3. Prepare Sauce:
    • In a small bowl, mix together soy sauce (or tamari), rice vinegar, Sriracha, and erythritol.
  4. Combine Ingredients:
