I’m the biggest lemon lover, and when I say that this is the BEST Keto Lemon Mug Cake, you’ve ever tasted…I couldn’t wait but share!!
Following a low-carb diet doesn’t really mean that you have to give up sweet treats, it just means making them a little differently.
So far, this is one of my personal favorites and even the kids are going to love this. Even though it feels like as if I’m cheating on my plan – but the best part is that I’m not cheating at all!
This has all the ingredients that you might expect from a keto cake, and you probably already have all of them on hand.

Bursting with lemon flavor, this low carb and keto-friendly mug cake is a single serving cake that cooks in the microwave in less than two minutes.

I have really been loving creating these delicious low carb mug cakes. A few years ago when I wrote my mug cake cookbook, and for a regular mug cake, I felt like I exhausted every flavor combination possible. But low carb mug cakes are a whole different territory and to create new mug cakes, it’s definitely reignited my desire.

LOW CARB FLOUR SUBSTITUTES

This cake is made with a combination of coconut flour and superfine almond flour. A tiny bit of coconut flour is what this recipe only needs, but it is essential to this recipe coming out correctly. Because I find that they come out more light and moist so I prefer almond flour cakes. But to soak up the lemon juice, a little bit of coconut flour is needed. You need to make sure you don’t add too much Coconut flour or it will make the cake dry because coconut flour is highly absorbent.

INGREDIENTS:

Lemon Mug Cake:

  • 1 tbsp butter, melted
  • 3 tbsp almond flour, packed
  • ½ tsp baking powder
  • 1 tbsp sweetener (use your sweetener of choice, (granular monkfruit)
  • (OR 1 egg white) 3 tbsp egg whites
  • 1 tsp lemon juice
  • 1/8-1/4 tsp lemon zest

Lemon Glaze:

  • 1 tbsp cream cheese, softened
  • 1 tbsp powdered sweetener (granular)
  • One tbsp heavy cream
  • 1 tsp lemon juice
  • 1/8 tsp lemon zest

DIRECTIONS:

  1. Into a mug, add ingredients for mug cake, mix thoroughly and for 1 min 20 secs, microwave!
  2. Mix until it gets well combined for the glaze!
