Ingredients

For the broccoli pizza crust

  • 4 cups riced broccoli (fresh or frozen)
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • Salt and black pepper, to taste

For the chicken bacon ranch topping

  • 1½ cups cooked chicken breast, shredded or diced
  • 4 slices bacon, cooked and crumbled
  • ⅓ cup ranch dressing (preferably low-carb, keto-friendly)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley or green onion, optional
  • ¼ teaspoon smoked paprika, optional

Instructions

Step 1: Prepare the broccoli

  1. Preheat your oven to 425°F (220°C).
  2. Rice the broccoli in a food processor until it resembles fine crumbs. If using frozen riced broccoli, thaw it completely.
  3. Microwave the broccoli for 4–5 minutes until tender.
  4. Allow it to cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible. This step is essential for a crispy crust.

Step 2: Make the crust

  1. In a large bowl, combine the drained broccoli, egg, 1 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  2. Mix until the ingredients form a cohesive mixture.
  3. Line a baking sheet or pizza pan with parchment paper.
  4. Spread the mixture into a thin, round pizza crust about ¼ inch thick. Press it firmly and evenly.

Step 3: Bake until crispy

  1. Bake the crust for 20–25 minutes, until golden brown and firm around the edges.
  2. Carefully flip it if it is firm enough, then bake for another 5 minutes for extra crispiness.
  3. Remove the crust from the oven and let it rest for 2–3 minutes.

Step 4: Add the chicken bacon ranch toppings

  1. Spread the ranch dressing evenly over the baked broccoli crust, leaving a small border around the edges.
  2. Distribute the cooked chicken breast evenly over the ranch.
  3. Sprinkle the crumbled bacon on top.
  4. Add the remaining mozzarella and Parmesan cheese.
  5. Sprinkle with smoked paprika if desired.

Step 5: Bake the pizza

  1. Return the pizza to the oven for 7–10 minutes, until the cheese is melted and bubbling.
  2. For a beautifully golden top, broil for 1–2 minutes, watching carefully to prevent burning.
  3. Remove from the oven and allow the pizza to rest for 3–5 minutes before slicing.
  4. Garnish with fresh parsley or green onion, then serve warm.

Tips for the crispiest crust

  • Remove excess water: Squeeze the cooked broccoli thoroughly before mixing.
  • Keep it thin: A thinner crust will bake more evenly and become crispier.
  • Bake before topping: Never put the toppings on raw broccoli crust.
  • Choose keto ranch: Check the label for added sugar and carbohydrate content.
  • Use lean chicken breast: This helps increase protein without adding excessive calories.
