Ingredients
For the Crust
- 1 large egg
- ¾ cup almond flour
- 2 tablespoons cream cheese
- 1½ cups shredded mozzarella cheese
- ½ teaspoon garlic powder, optional
- ½ teaspoon Italian seasoning, optional
- Pinch of salt, optional
For Topping — Optional
- ¼–½ cup low-sugar pizza sauce
- ½–1 cup shredded mozzarella
- Pepperoni
- Sliced mushrooms
- Black olives
- Bell peppers
- Cooked chicken
- Fresh basil or parsley
Instructions
1. Prepare the oven: Preheat the oven to 400°F (200°C). Line a baking sheet or pizza pan with parchment paper.
2. Melt the cheese: Place the mozzarella and cream cheese in a microwave-safe bowl. Microwave for 45–60 seconds, then stir well. If the cheese isn’t completely melted, microwave in additional 10–15-second intervals until smooth.
3. Add the remaining ingredients: Allow the cheese mixture to cool for a minute or two so the egg doesn’t cook when added. Mix in the egg, almond flour, garlic powder, Italian seasoning, and salt.
4. Form the dough: Stir and knead the mixture until it forms a cohesive dough. If it becomes difficult to work with, slightly dampen your hands with water or lightly grease them.
5. Shape the crust: Place the dough between two sheets of parchment paper. Roll or press it into a circle or rectangle about ¼ inch thick. A thinner crust will become crispier.
6. First bake: Remove the top sheet of parchment and bake the crust for 10–12 minutes, or until the edges are golden and the surface is lightly browned.
7. Add toppings: Remove the crust from the oven. Spread with a thin layer of low-sugar pizza sauce, then add mozzarella and your preferred keto-friendly toppings.
8. Finish baking: Return the pizza to the oven for another 5–8 minutes, until the cheese is melted, bubbling, and lightly golden.
9. Make it extra crispy: For a more browned top, broil for 1–2 minutes, watching closely.
10. Rest and slice: Let the pizza cool for 3–5 minutes before slicing. This helps the crust firm up and makes it easier to handle.

This crust is keto-friendly and low-carb, but it isn’t an especially high-protein crust by itself. For a higher-protein pizza, use chicken breast, turkey pepperoni, lean ground beef, or extra cheese as toppings.
