Ingredients:

  1. 1 cup pecan halves
  2. 1/4 cup unsalted butter
  3. 1/4 cup heavy cream
  4. 1/2 cup granulated erythritol or any keto-friendly sweetener
  5. 1/2 teaspoon vanilla extract
  6. A pinch of salt

Instructions:

  1. Toast Pecans: Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet and toast them in the oven for about 5-7 minutes, or until they become fragrant. Keep an eye on them to prevent burning. Once toasted, set aside to cool.
  2. Prepare Caramel Sauce: In a saucepan over medium heat, melt the butter. Add the granulated erythritol and stir until it dissolves, forming a caramel-like mixture. Be careful not to burn the sweetener.
  3. Add Cream and Vanilla: Once the sweetener has melted, slowly pour in the heavy cream while stirring continuously. Allow the mixture to come to a gentle boil, then reduce the heat to low and simmer for 5-7 minutes, stirring occasionally. The mixture should thicken.

  7. Chill: Place the tray in the refrigerator for at least 1-2 hours, or until the clusters have hardened.
