Ingredients
Beef and bacon layer
- 2 lb (900 g) lean ground beef (90–93% lean)
- 6 slices bacon, cooked and chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
Creamy cheeseburger mixture
- 4 large eggs
- ½ cup (120 g) plain nonfat Greek yogurt
- ½ cup (120 ml) unsweetened almond milk
- 1 tablespoon yellow mustard
- 1 tablespoon sugar-free ketchup
- 1 teaspoon Worcestershire sauce, optional
- 1½ cups (170 g) shredded cheddar cheese, divided
- ½ cup (55 g) shredded mozzarella cheese
Optional toppings
- Chopped dill pickles
- Sliced green onions
- Extra sugar-free ketchup or mustard
Instructions
1. Preheat the oven. Set the oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish.
2. Cook the bacon. Cook the bacon in a skillet until crisp. Transfer to a paper towel-lined plate, then chop into small pieces.
3. Brown the beef. In the same skillet, cook the ground beef and diced onion over medium-high heat for 7–10 minutes, breaking up the meat as it cooks. Drain excess fat if needed.
4. Season the meat. Add the garlic, salt, pepper, smoked paprika, and onion powder. Cook for another minute. Stir in the chopped bacon, mustard, sugar-free ketchup, and Worcestershire sauce.
5. Prepare the creamy mixture. In a bowl, whisk together the eggs, Greek yogurt, and almond milk until smooth. Stir in ½ cup of the cheddar and all the mozzarella.
6. Assemble the casserole. Spread the beef mixture evenly in the prepared baking dish. Pour the egg and cheese mixture over the meat. Sprinkle the remaining 1 cup of cheddar on top.
7. Bake. Bake uncovered for 25–30 minutes, until the cheese is golden and the center is set. The center should reach 160°F (71°C) for ground beef, and the egg mixture should be fully cooked.
8. Rest and serve. Let the casserole rest for 5–10 minutes before slicing. Add chopped pickles or green onions, if desired.

Tips for a high-protein, low-carb casserole
- Choose lean beef: 90–93% lean ground beef provides plenty of protein without excessive fat.
- Use sugar-free condiments: Regular ketchup can add unnecessary sugar and carbs.
- Add more protein: Mix in extra lean ground beef or use additional egg whites.
- Avoid high-carb additions: Skip breadcrumbs, potatoes, and pasta.
- Storage: Refrigerate leftovers in an airtight container for up to 4 days. Reheat in the microwave or oven until hot.
