Love these so so much! They have an awesome texture and took me less than 30 minutes to make and bake. Can’t get better than that! I use MFP to calculate the macros. Always double check for accuracy as brands of sweetener, SF chocolate, and almond flour vary. This made 16 “brownies” and macros are for 1.

Keto Blonde Brownies

  • 1/4 cup Softened Butter (NOT MELTED)

  • 4 oz. Cream Cheese, softened

  • 2 Eggs

  • 1 tsp Vanilla

  • 1 3/4 cups Almond Flour

  • 3/4 cup Monk Fruit Powder (or other low carb sweetener of choice)

  • 2 tsp. Baking Powder

  • 1/2 tsp Xanthan Gum

  • 1/2 cup Sugar Free Chocolate or Dark Chocolate Chips

  • Optional: Sea Salt


  1. Preheat the oven to 350 F and grease an 8X8″ pan.

  2. In a mixing bowl combine the butter, cream cheese, and low carb sweetener together and beat with a hand mixer until smooth.

  3. Mix in the vanilla and the eggs.

  4. Combine the almond flour, baking powder, and xanthan gum into the mixture. Fold in the chocolate.

  5. Pour the mixture into the 8×8″ pan and spread evenly. Bake for 18-20 minutes until the mixture is set and a toothpick comes out clean.

  6. Allow the bars to cool before cutting and serve.
