KETO BLUEBERRY LEMON BREAD
Ingredients:

2 cups almond flour

1/2 cup coconut flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3 eggs

1/2 cup unsweetened almond milk

1/2 cup melted coconut oil

1/2 cup fresh blueberries

2 tbsp lemon juice

Zest of 1 lemon

1/4 cup granulated erythritol

1 tsp vanilla extract
Instructions:

Preheat the oven to 350°F.

In a mixing bowl, combine the almond flour, coconut flour, baking powder, baking soda, and salt. Mix well.

In a separate mixing bowl, whisk the eggs, almond milk, coconut oil, lemon juice, lemon zest, erythritol, and vanilla extract.

Add the dry ingredients to the wet ingredients and mix well.

Gently fold in the blueberries.

Pour the batter into a greased loaf pan.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
