Keto Broccoli Fritters

These keto broccoli fritters make for a delicious and satisfying low-carb snack or side dish. Enjoy the crispy edges and savory flavors!

Ingredients:

  • 2 cups riced Broccoli
  • 1 1/2 cups shredded extra sharp Cheese
  • 1 cup Parmesan Cheese
  • 2-3 Eggs (depending on consistency)
  • Garlic Powder, to taste
  • Pepper, to taste
  • Paprika, to taste
  • Salt, if desired
  • 1/4 tsp Almond Flour (optional, if mixture is too wet)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare Broccoli:
    • If you haven’t already, rice the broccoli by processing it until it reaches a rice-like consistency.
  3. Mix Ingredients:
    • In a large bowl, combine riced broccoli, shredded extra sharp cheese, Parmesan cheese, eggs, garlic powder, pepper, paprika, and salt (if desired). Mix until all ingredients are well blended.
  4. Adjust Consistency:
    • If the mixture is too wet, you can add 1/4 teaspoon of almond flour to help absorb excess moisture. However, it might not be necessary.
  5. Shape and Bake:
    • Using a medium cookie scoop, place portions of the mixture on parchment paper. Cover with another sheet of parchment paper and press each fritter to about 1/2”-1/4” thickness.
  6. Bake First Side:
    • Bake in the preheated oven for 7-8 minutes, until the edges start to brown.
  7. Flip and Continue Baking:
    • Flip each fritter and cook for an additional 8-9 minutes or until the edges are browned.
  8. Optional Extra Flip:
    • For a darker color, you can flip the fritters a second time and cook for an extra 4 minutes.
  9. Cool and Store:
    • Allow the broccoli fritters to cool slightly before storing. Place them in a ziplock bag or a tightly sealed container in the refrigerator.
