Ingredients:

  • 1/2 cup riced cauliflower, cooked and drained
  • 2 tablespoons almond flour
  • 1 large egg white or 1 1/2 cups fat-free liquid egg substitute
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon baking powder
  • Dash of Italian seasoning
  • 2 tablespoons marinara sauce (such as Rao’s)
  • 1 stick of light string cheese, chopped or shredded (about 2 tablespoons)
  • 4 pieces of turkey pepperoni, chopped

Directions:

  1. Start by preparing your riced cauliflower. You can use store-bought riced cauliflower or make your own by grating or processing cauliflower florets until they resemble rice grains. Cook the cauliflower in the microwave or on the stovetop until it’s tender. Drain any excess moisture and set it aside.
  2. Take a wide microwave-safe mug or a small bowl and spray it with nonstick cooking spray to prevent sticking.
  3. In the mug or bowl, combine the cooked and drained riced cauliflower, almond flour, egg white or egg substitute, grated Parmesan cheese, baking powder, and a dash of Italian seasoning. Mix the ingredients thoroughly to form a batter.
  4. Use a spoon to press the mixture down into the mug or bowl, shaping it into a crust. Ensure the crust is evenly spread along the bottom.
  5. Place the mug or bowl in the microwave and cook the crust for about 1 1/2 minutes or until it’s set. The cooking time may vary slightly depending on your microwave’s power, so keep an eye on it.
  6. Once the crust is cooked and firm, remove it from the microwave.
  7. Spread 2 tablespoons of marinara sauce over the crust, leaving a little space around the edges for your “crust.”
  8. Sprinkle the chopped or shredded light string cheese evenly over the sauce.
  9. Add the chopped turkey pepperoni on top of the cheese.
