Ingredients:

For the Dough:

  • 1 ½ cups almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • ¼ teaspoon salt
  • 2 large eggs
  • 2 tablespoons melted butter

For the Filling:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • 1 cup shredded cheddar cheese

Instructions:

Preparing the Dough:

  1. In a mixing bowl, combine almond flour, coconut flour, baking powder, xanthan gum, and salt.
  2. Add eggs and melted butter to the dry ingredients. Mix until a dough forms.
  3. Knead the dough until it becomes smooth and elastic. If the dough is too dry, you can add a little water, one tablespoon at a time, until it reaches the desired consistency.
  4. Divide the dough into 6 equal portions. Roll each portion into a ball and flatten it into a circle using your hands or a rolling pin.

Making the Filling:

  1. Heat olive oil in a skillet over medium heat. Add diced onions and minced garlic. Cook until onions become translucent.
  2. Add ground beef to the skillet. Cook until browned, breaking it apart with a spoon as it cooks.
  3. Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Cook for another 2-3 minutes until the spices are fragrant.
  4. Add diced tomatoes and cook for an additional 5 minutes until the mixture thickens slightly. Remove from heat and stir in chopped cilantro.

Assembling the Pockets:

  1. Preheat your oven to 350°F (175°C).
  2. Place a spoonful of the beef mixture onto one half of each dough circle, leaving a small border around the edges.
  3. Sprinkle shredded cheddar cheese over the beef mixture.
  4. Fold the other half of the dough over the filling to create a half-circle shape. Press the edges firmly to seal.
  5. Use a fork to crimp the edges of the pockets.
  6. Place the pockets on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 20-25 minutes, or until the pockets are golden brown and crispy.
