Keto Chicken Fajita Bowl

 

Ingredients:

For the chicken fajita:

  • 1 lb chicken breast, thinly sliced
  • 2 bell peppers (any color), sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the keto salsa:

  • 2 tomatoes, diced
  • 1/2 onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

For serving:

  • Sour cream
  • Full-fat mayonnaise
  • Sliced jalapeños
  • Shredded cheese
  • Sliced avocado (optional)

Instructions:

  1. In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper to create the fajita seasoning.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced chicken breast to the skillet and sprinkle half of the fajita seasoning over the chicken. Cook until the chicken is browned and cooked through, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers, onion, and minced garlic to the skillet. Sprinkle the remaining fajita seasoning over the vegetables. Cook, stirring occasionally, until the vegetables are tender-crisp, about 5-6 minutes.
  4. While the vegetables are cooking, prepare the keto salsa. In a mixing bowl, combine the diced tomatoes, chopped onion, chopped jalapeño, chopped cilantro, lime juice, and salt. Mix well and set aside.
  5. Once the chicken and vegetables are cooked, assemble your chicken fajita bowls. Divide the cooked chicken and vegetables among serving bowls.
  6. Top each bowl with a spoonful of the keto salsa, a dollop of sour cream, a teaspoon of full-fat mayonnaise, sliced jalapeños, and shredded cheese.
  7. If desired, add sliced avocado on top of each bowl.
  8. Serve immediately and enjoy your delicious Keto Chicken Fajita Bowls without the need for a wrap!
