Keto Peanut Butter Fudge

Ingredients:

  • 1 cup peanut butter (sugar-free, natural peanut butter works best)
  • 1 cup unsalted butter
  • 6 tablespoons powdered sugar replacement (such as powdered erythritol or powdered monk fruit sweetener)

Instructions:

  1. In a microwave-safe bowl, combine the peanut butter, unsalted butter, and powdered sugar replacement.
  2. Microwave the mixture in short intervals, stirring each time until the ingredients are fully melted and well combined. Be careful not to overheat the mixture.
  3. Once melted and smooth, pour the mixture into a parchment paper-lined 9×9 inch pan or similar-sized dish. Use a spatula to spread the mixture evenly in the pan.
  4. Place the pan in the freezer and allow the fudge to set for at least 1-2 hours, or until firm.
  5. Once the fudge is set, remove it from the freezer and use a sharp knife to cut it into 36 equal-sized pieces.
  6. Store the peanut butter fudge in an airtight container in the freezer. It’s important to keep it frozen as it can soften quickly at room temperature.
