Keto Cinnamon Coffee Cake
Ingredients:
For the Cake:
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup erythritol (or your preferred keto sweetener)
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1 tsp vanilla extract
For the Cinnamon Swirl:
- 1/4 cup erythritol (or your preferred keto sweetener)
- 2 tsp ground cinnamon
For the Streusel Topping:
- 1/2 cup almond flour
- 2 tbsp melted butter
- 2 tbsp erythritol
- 1/2 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
- In a separate large bowl, beat the softened butter until creamy. Add the eggs, almond milk, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until a smooth batter forms.
- In a small bowl, mix together the ingredients for the cinnamon swirl (erythritol and ground cinnamon).
- Pour half of the cake batter into the prepared baking dish and spread it evenly.
- Sprinkle the cinnamon swirl mixture over the batter in the baking dish.
- Carefully spread the remaining cake batter over the cinnamon swirl layer.
- In a separate bowl, prepare the streusel topping by mixing together the almond flour, melted butter, erythritol, and ground cinnamon. The mixture should resemble coarse crumbs.
- Sprinkle the streusel topping evenly over the top of the cake batter.
- Bake in the preheated oven for 30-35 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the baking dish for about 15-20 minutes.
- After the cake has cooled slightly, you can lift it out of the baking dish using the parchment paper or cut it directly in the dish.
- Serve the keto cinnamon coffee cake warm, and enjoy!
