Keto Corned Beef Hash with Eggs

  • 9 oz cooked corned beef, diced (weighed after cooking)

  • 200g radishes, diced

  • 50g white onion, diced

  • 2 T Kerrygold butter

  • 4 large eggs



  1. Preheat oven to 350.

  2. Heat oven-safe pan (I used cast iron) over medium heat. Add butter once heated.

  3. Add radishes and onions. Cook, stirring occasionally, until soft.

  4. Stir in corned beef and let it sit for 2-3 minutes to crisp up.

  5. Create wells for eggs and carefully crack eggs into pan.

  6. Season eggs with salt and pepper to taste.

  7. Bake for 7-9 minutes until eggs are to desired doneness.

Note: The picture only includes 3 eggs, but the recipe here includes 4. I did not plan well.
