Ingredients:
For the filling:
- 1 pound ground meat (beef, chicken, or turkey)
- Your favorite seasoning blend for the meat
- 1 tablespoon olive oil (if needed)
For the dough:
- 2 1/2 cups almond flour
- 2 ounces cream cheese
- 2 large eggs
- 2 cups shredded mozzarella cheese
Instructions:
1. Prepare the Filling:
- In a skillet, cook the ground meat over medium heat until browned and cooked through.
- Season the meat with your favorite seasoning blend. You can use a combination of garlic powder, onion powder, paprika, cumin, salt, and pepper, or any other spices you prefer.
- Once cooked, remove the meat from the skillet and set it aside to cool.
2. Make the Dough:
- In a nonstick pan, combine the almond flour, cream cheese, eggs, and shredded mozzarella cheese over low heat.
- Stir continuously until the cheese is melted and all ingredients are well combined, forming a dough-like consistency. This may take a few minutes.
- Remove the dough from the heat and transfer it to a flat surface lined with parchment paper.
3. Shape the Empanadas:
- Divide the dough into equal portions, depending on how large you want your empanadas to be.
- Roll out each portion of dough between two sheets of parchment paper to form a circle or oval shape, about 1/4 inch thick.
4. Fill and Seal the Empanadas:
- Place a spoonful of the cooked meat filling onto one half of each dough circle.
- Fold the other half of the dough over the filling to create a semi-circle shape.
- Press the edges of the dough together to seal the empanadas. You can use a fork to crimp the edges for a decorative touch.
5. Bake the Empanadas:
- Preheat your oven to 375°F (190°C).
