To whip up homemade mayo, blend eggs, capers, garlic, salt, pepper, apple cider vinegar, and mustard in a tall beaker. Slowly add oils while blending until creamy. Chill and enjoy on sandwiches or salads

 

Homemade Mayo:

Ingredients:

  • 200 mL neutral oil (such as sunflower oil)
  • 50 mL olive oil (cold-pressed or extra virgin)
  • 50 mL MCT oil (or 50 mL additional neutral oil)
  • 2 medium-sized eggs
  • 7 small capers
  • 1/4 tsp garlic powder
  • 1/3 tsp salt
  • 2 shakes of white ground pepper
  • 2 tbsp apple cider vinegar
  • 1 tbsp mild mustard

Instructions:

  1. Gather all your ingredients and make sure you have them measured accurately.
  2. In a tall beaker, crack the eggs and add the capers, garlic powder, salt, pepper, apple cider vinegar, and mustard.
  3. Pour in the neutral oil, olive oil, and MCT oil into the beaker.
  4. Place the mixing head of the handheld blender over the eggs, ensuring it reaches the bottom of the beaker.
  5. Start blending at full speed. As you blend, you’ll notice the mayo forming at the bottom of the beaker. Gradually move the blender upwards to incorporate the rest of the ingredients.
  6. To prevent unmixed oil from sticking to the beaker walls and ensure a smooth consistency, lift the blender slightly above the thin oil film on the walls. Use the mayo on the mixing head to smear downwards around the edges of the beaker, then blend again quickly.
  7. Once the mayo reaches your desired consistency and looks smooth and creamy, transfer it to a smaller airtight container.
  8. Seal the container and refrigerate the mayo to chill before using.
